In Bellevue, we’re celebrating harvest time and Apple Day with a big slice of sweet and delicious Apple Cake. We thought you might like to try it too – it’s very easy to make with your little ones and even nicer to eat! Here’s Cupcake Belle‘s Secret Recipe…

Fruity Apple Cake

Cupcake Belle’s Apple Cake

You need:

225g self-raising flour

1 pinch salt

1 tsp ground cinnamon
 or ginger
110g butter
, cubed
110g caster sugar

4 cooking apples, peeled, cored and chopped

Big handful of raisins
2 eggs, beaten

1 to 2 tbsp milk
Demerara sugar (optional)

  • Heat your oven to gas mark 5/190°C/375°F and grease a 20cm (8in) cake tin.
  • Sift the flour, salt and cinnamon or ginger into a big bowl, then rub in the butter until it all looks like breadcrumbs – little fingers are very good at doing this bit!


  • Stir in the sugar, chopped apples and raisins, then mix everything together with a wooden spoon.


  • Stir in the beaten eggs and milk so that it all comes together. Spoon it into your cake tin and use the spoon to level the top of the cake. Sprinkle some demerara sugar over the top if you like.
  • Put the cake tin in middle of your oven and bake for 45 minutes to 1 hour until the cake looks golden brown and is springy to the touch. If you insert a knife in the middle of the cake, it should come out clean.
  • Let the cake cool in the tin for 10 minutes before serving.
